Bam! How do you like dem apples?!
I didn't have any other protein in the fridge so I cooked up some quinoa and sauteed courgettes, red onions, and spinach. Seasonings included red wine vinegar, EVOO, cumin, garlic, salt, and pepper. I also crumbeled some feta cheese on top. Today's not so secret ingredient, hot sauce.
Quinoa- If you haven't tried it before, I highly suggest you cook some up asap! It is so much more fun to eat than regular brown rice. It cooks up fluffy and has a slight crunchy texture. It is also high in protein and other vitamins and minerals. All around a good health food.
