Kimbap

We went to Seoul Bakery yesterday after church for some Korean grub. Kimbap- the korean version of a sushi roll: rice, pickled radish, spinach, egg, carrots, and beef. The perfect protein, carb, and veggie combo. Kapow! :-D

Thin crust pizza you fold and enjoy. Yummy!!
Arancini balls. Fried rice and cheese balls. They weren't very good :(
Dessert was fantastic. It was a honeycomb cheesecake with crunchie pieces. The cheesecake bit wasn't overly sweet and it had a perfect balance of sweet and savory with the crust.

Dinner Sunday night was @ Thai Aubergine. We started off with the tempura vegetable dish with sweet chili sauce to dip. Who doesn't like fried vegetables? I like vegetables in all forms!

Veggie spring rolls: crispy and VERY hot on the inside. Eat with caution. Delicious tho!
Prawn curry. Mmm.. this was my favorite dish of the night. The curry was amaaaazeeeeeeee--baaalls! It was sweet and had that perfect coconut flavor. Wowza. Yes. More of that please.

Prawn pad thai.
Coconut rice. The rice was sticky and very fluffy.
Beef randang. The sauce wasn't very flavorful so I was a bit disappointed with this dish.
Mixed seafood dish.
Salmon curry. We wolfed down everything and ordered two more rice. I would definitely recommend Thai Aubergine. I will be going back for sure!
We got flowers and chocolates!
I luurve flowers :-D They make me so happy and anxious for summer!

  • I've somehow managed my caffeine addiction and haven't had a cup of coffee in two weeks. Praise the Lord!! 
  • The weather in London is getting nicer! Aka its warmer and it hasn't rained in like 5 days. 
  • Visit to the States coming up in a month

Restaurant Week

It was a beautiful night in London last night. It's really beginning to feel like SPRING!!
We were in the Mayfair area. I love it. It reeks of opulance and money money monnneeeey! Hey, it's nice to pretend every once in a while :-D
We've ARRIVED! It's restaurant week in London. Fine dining at prix fixe prices. I dig it.

My drink: Passionfruit, lemon, kiwi juice. Tart, sweet, and delicious!
Organic hake and garlic cakes with mushy peas and beetroots. Flaky and crispy.. Yum!
Tandoori chicken with spinach rice. This was an amazing dish. The chicken was tender and had that wonderful tandoori smokey taste to it with a tomato based sauce on bottom.

Mango and pistachio kulfi. It's like ice cream but a bit icier, sort of like sorbet.

After breakfast, I went to the gym to do some weights. Today's focus was Bis/Tris.

Hers: Split pea soup w. real bacon chunks!! I don't mean fake London "bacon" which is more like canadian ham but real American bacon pieces! Mmmm..
His: beet salad with goat cheese
shoulder of lamb, mashed potatoes, and spinach all smothered in delicious gravy. Comfort food for the soul
Hazelnut and brown sugar slice with champagne poached rhubarb. The hazelnut slice was nice but I wasn't digging the sour rhubarb flavor.
Apple crumble. Sweeeetness. Great way to end the meal :)

Hello Sun!

Last night's dinner was quick and easy. I had to scramble to eat and dash to my salsa class! Red pepper hummus with wholegrain pita bread.

The hubby brought back a late night snack of rice and lentils w. caramelized onions, spinach stuffed dough, and a little Lebanese meat pizza. That's the best way that I can describe it folks. It was all delicious!

This mornings take on breakfast was quite unusual but a nice way to switch it up. I'll let the pictures do the talking.

I topped this bad boy with some ground seeds (you couldn't taste it at all!) for some Omega 3, 6 action.

Lunch today:

I stopped by Itsu because I was feeling very tired after cleaning the house and I didn't really feel like putting anything together. I was pleasantly surprised by how many vegetables were in the grilled chicken rice bowl! It had a nice ginger kick to it

Omega 3, 6, 9

Afternoon snack of oranges for a Vitamin C kick
leftovers for lunch- morrocan tagine chicken with wholewheat pasta and asparagus/kale/spinach mixture
Dinner last night was from T's cafeteria- veggie lasagna with cabbage, edamame, and spicy chicken wings he picked up on the way back from work. Mmm.. fried chicken wings.. Yuuuuuummm...

I got lazy this morning because we haven't been able to use our kitchen sink (we're waiting for our new dishwasher to be hooked up to the water hose) and I didn't feel like leaving ANOTHER dirty pan to be washed later so smoothie it was! I rinsed out the Vitamix in our bathroom sink. :-P Improvisation!

Lunch @ Pret A Manger
Hummus salad with beet root, roasted red pepper, seeds, beans, tomatoes, cucumbers, and chickpeas with a tortilla roll and a vinegar based dressing. It was mighty filling and delicious!

Stopped by Holland and Barrett before meeting a friend for window shopping and outside cafe chit chat :)
Rice pudding w. a heaping tablespoon of ground seeds on top.  I read in my nutrition book that it's better to eat seeds that are ground because your body finds it easier to digest. Lots of good nutritious stuff in the bag:

Pilates anyone?

GREEN SMOOTHIE-
  • cup of milk
  • 1/2 cup blueberries
  • 1 banana
  • splash of vanilla yogurt
  • 2 big handfuls of spinach
  • ice
  • small handful of raspberries
  • squeeze of agave nectar 
  • Toppings: raisins, cocoa cherry bear granola 
Dinner: Mac n. Cheese with a side of sauteed spinach and kale.

Breakfast this morning: Scrambled eggs made with salt, pepper, and dill with a big heaped tablespoon of ground flaxseeds. It gave my eggs a nice nutty taste.

Yogurt bowl of low fat vanilla with blueberries, walnuts, and raisins.

I did some pilates today for the first time. It wasn't as bad as I thought it was going to be. I tried yoga for a few days in the past and was completely bored outta my mind with it. This DVD was divided into 6, 10 minute segments which made it a lot easier to do. I combined 3 segments to do a total of 30 minutes; working on my muscular strength and flexibility. I definitely see some more pilates in my future :-)
