Gluten free chocolate chip cookies

I had a craving for chocolate chip cookies the other day, so I decided to try out a really simple flourless choco chip recipe from a new blogger I found.

3/4 cup GF oats
2 tablespoons brown sugar
1 tablespoon + 2 teaspoons white sugar
1/4 tsp baking soda + 1/8 tsp salt, all ingredients blended together in a food processor to the consistency of flour
3 tablespoons mini dark chocolate chips
2 tablespoons soy milk + 1 tablespoon vegetable oil

I was a bit skeptical about the crumbly texture but I think its because I added too much soymilk! Oops.. I did my best to form them into balls with my hands.
I got 8 decent size balls on the greased cookie sheet (ergh... I think we need to get a new one!). I popped them into the oven at 175 C for literally 5 minutes and they came out looking terrible but tasting amaazeballs!

I just couldn't wait to get my grabby hands on these bad boys. They were chewy, oaty, chocolatey, and delicious!
Oh yea.. they were gone in 2 days :)
